Source:

1/2 c  pine nuts, (or substitute cheaper sunflower seeds, cashews, or almonds)
    1 1/2 T  lemon juice
2 T  olive oil, (or hemp or flax oil)
    1/2 T  garlic
    1 T  fresh ginger, minced
    1 T  garam masala
    1/2 t  cinnamon, (I used 1/4 tsp)
    1/4 t  black pepper
1 t  salt, (I used 3/4 tsp, which was plenty)
    4 c  baby spinach
1/4 c  red bell pepper, finely diced
    3 T  chives, minced, (I used 3 green onions)

In a high speed blender (I used a food processor), blend the pine nuts, lemon juice, olive oil, garlic, ginger, garam masala, cinnamon, pepper, and salt until smooth (takes several minutes in a food processor).

(I diced the bell pepper and green onions and sauteed them in a few tablespoons of water over low heat to soften them while the sauce was being blended.)

Mix together the spinach, bell pepper, and chives with the sauce. (I combined these on the stove in the pan I was using to soften the bell pepper and green onions, stirring until everything was combined and the spinach was wilted.)

Serve over warm grains, or as a side dish.
