    2 lb  boneless chicken breast halves
    2/3 cup  Onion, medium, chopped
    2 tbsp + 2 tsp  Olive Oil
    1 1/4 tsp  Salt
    1 1/4 tsp  Pumpkin pie spice
    1 1/3 can  Orange juice, frozen
    2 1/2 tsp  orange zest, grated
    4 cup  Cranberries
    2/3 cup  Granular Splenda


Brown chicken and onion in oil and salt in skillet over med-high heat. Add remaining ingredients, reduce heat to simmer and cook 30 minutes. Serve with hot cooked rice.

Crockpot: Add browned chicken, onions and other ingredients to crockpot.

Cook 4 hours on high or 8 hours on low
