Potato salad
Nb persons: 4
2 lb | potatoes, cooked, peeled and sliced |
2 | eggs, hard-boiled and diced |
1 cup | celery, diced |
1/2 cup | cucumber, diced |
1/3 cup | parsley, chopped |
Vinaigrette dressing: | |
1 1/2 tsp | mustard |
5 tbsp | olive oil |
2 1/2 tbsp | vinegar |
3/4 tsp | salt |
pepper | |
cayenne pepper | |
paprika |
Mix well the dressing ingredients. Marinate the potatoes in the dressing while they are still warm, add the remaining ingredients, mix well. Refrigerate at least 1 hour.
