Guiness Pork
    1kg  spare ribs, cut in pieces
      Oil for deep frying
      Marinade
    1  egg
    1 tsp  salt
    1tsp  sugar
    1/2 tbsp  light soya sauce
    1 tsp  sesame oil
    1 tbsp  plain flour
    2 tbsp  corn flour
    1 tbsp  custard powder
    5 tbsp  water
      Sauce
    1 tbsp  oil
    100 ml  guiness Malta
    100 ml  guiness stout
    100 ml  7 up
    4 tsp  sugar
    1 tsp  honey
Mix spareribs with marinate and season for 3 hrs. Deep fry in hot oil until golden brown. Dish and drain. Pour sauce into a wok and cook until thick. Add in spareribs,mix well and dish up. Fried Spareribs in Guinness Stout Ingredients 500 gms Spareribs, chopped into 3-4 cm lengths
      Marinade
    1 cube  preserved beancurd, ( lam yee)
    1 tbsp  light soya sauce
    2 tbsp  sugar
    1 tbsp  fresh ginger juice
    1/2 tsp  meat tenderiser
    3-4 tbsp  Guinness Stout
    1 tbsp  plain flour
    2 tbsp  cornflour
Sauce ingredients
    1 tsp  sugar
    11/2 tbsp  apricot jam
      Salt to taste
    1 tbsp  lemon juice
    6-7 tbsp  Guinness stout
    1 tsp  sesame oil

Method
Blanch spareribs in boiling water, then drain well and season in marinade for several hrs. Heat oil in wok and deep fry the marinated spareribs until golden brown.
Pour sauce into a wok and cook until thick.
Add in spareribs,mix well and dish up.
