Breaded Aubergine with Pasta & Tomato Sauce

1 | egg |
2 tbsp | dried breadcrumbs |
1 tsp | sesame seeds |
4 oz | aubergine |
1 small tin | canned tomatoes |
¼ tsp | sugar |
1 pinch | dried oregano |
1 dash | hot pepper sauce |
2 oz | pasta |
1. Preheat the oven to 180°C.
2. Lightly beat the egg in a shallow bowl and mix the breadcrumbs and sesame seeds together on another plate.
3. Cut the aubergine into slices about ½" thick, dip them into the egg and then into the breadcrumbs to coat. Place on a non-stick baking tray and place at the top of the oven.
4. Bake for 15-20 minutes or until aubergine is cooked through
3. Meanwhile combine the herbs, sugar, pepper sauce and tomatoes in a small saucepan and simmer uncovered over a medium heat.
4. Cook the pasta following package directions, omitting any suggested fat or salt.
5. Serve the pasta with the aubergine slices and cover with the tomato sauce.
