Quorn & Bean Chilli with Rice

1½ tsp | olive oil |
3 oz | Quorn mince |
½ | onion |
1 clove | garlic |
3 oz | aubergine |
3 oz | mushrooms |
1 small tin | canned tomatoes |
1 tsp | chilli powder |
1 pinch | dried oregano |
1 tsp | tomato purée |
2 oz | kidney beans |
1 oz | brown rice, additional |
1. Heat half the oil in a non-stick pan and cook the Quorn mince for about 5 minutes, until browned. Remove from the pan and set aside.
2. Heat the remaining oil in the pan and add the onion and garlic. Cook for 5 minutes until softened slightly.
3. Add the aubergine, cut into cubes, sliced mushrooms and remaining ingredients.
4. Simmer gently for 15 minutes, then return the Quorn mince to the pan and heat through.
