    2 cups  flour
    1 T  baking powder
    2 tsp.  sugar, or 1 T
    1 tsp.  salt
    1/4 tsp.  baking soda
    1/3 cup  shortening
    3/4 cup  buttermilk, or 1 cup

Preheat oven to 450 degrees. In a medium bowl, mix flour, baking powder, sugar, salt and baking soda. Cut in shortening with a pastry blender or two knives until mixture resembles coarse peas. Add buttermilk to flour mixture. Stir only until dough clings together. On a lightly floured board, knead dough gently with fingertips 25-30 times. Gently roll out dough 1/2 inch thick. Cut with a floured 2 1/2-inch biscuit cutter. Bake biscuits on an ungreased baking sheet 15 minutes or until golden brown.
