Ingredienti persone
    30 g  Zucca
    20 g  Zucchero
    100 ml  Acqua
    5 ml  Aceto, bianco
    2 g  Sale
      pepe

Preparazione
Sbollentare la brunoise di zucca in acqua,sale e aceto per pochi secondi, scolare e unire lo zucchero.
Chiudere in sottovuoto al 50% e cuocere nel roner per 1 ora a 80°.
