Broccoli Cheese Soup

1 tablespoon | butter |
1 small | onion diced |
1 cup | diced carrots |
3 cups | fresh broccoli |
2 cups | chicken broth |
1/2 teaspoon | each thyme and garlic powder, (or 1 clove minced) |
salt | |
pepper to taste | |
2 tablespoons | flour |
1 1/2 cups | light cream |
1 cup | sharp cheddar cheese |
1/3 cup | fresh parmesan cheese |
Sauté diced onion, carrot, garlic, and thyme in butter. Add salt and pepper.
Add flour and stir making sure not to scorch the flour. Add chicken broth and broccoli and simmer over medium heat 20 min. Until broccoli is tender.
Blend with immersion blender then add heavy cream. Remove from heat and add cheese. Serve.
