Grandma May's Rolls (Kari’s Recipe)

2 | eggs |
1/2 cup | sugar, (I use honey) |
2 tsp. | salt |
2 cups | warm water |
1/4 cup | butter |
lard, alternative | |
2 cakes | yeast, (1 cake = 1 Tbs or 1 envelope) |
7 1/2 to 8 cups | flour, (I usually can only get 7 cups in) (I use 3 of whole wheat and the rest regular) |
This is how I do it (grandma just puts it all together):
1. Mix together 3 cups flour, yeast, salt, and sugar.
2. Mix together warm water, softened (or melted) butter, and eggs (also honey if using honey instead of sugar) and add to the flour mixture. A whisk works well for this part.
3. Mix in 2 more cups of flour. Mix in the rest of the flour about 1/2 cup at a time until you turn it out to kneed it.
4. Kneed lightly for a few minutes.
5. Return to bowl with some oil in it. Turn to coat with oil.
6. Let rest for about 1 hour (or until doubled in size)(I put a dish towel over the bowl and place it somewhere warmish).
7. Shape rolls on greased baking sheet or stone (this should make 24 rolls).
8. Let rise for about 45 min.
Bake at 400 or 425 for 12-15 min.
Dough may be used for cinnamon rolls also. Baked rolls freeze well.
