Red Beans and Rice

1 1/2 cups | dry beans |
5 cups | water |
1 smoked ham hock (1/2 to 3/4 pound) (you can omit, use 1/4 tsp liquid smoke) | |
1 1/4 cups | water |
1 large | onion, diced |
1/2 tsp | onion powder |
1/2 tsp | garlic salt |
1/4 tsp | red pepper flakes |
1/2 tsp | salt |
3 tbsp | lard |
1/4 tsp | freshly ground pepper |
Sauté onion, next add the rest of ingredients and cook under pressure for 50 minutes. Once timer beeps simply let out steam, take off lid and let sit for 12 minutes. Serve with cooked rice. | |
