Blackened Salmon

16 oz | salmon |
2 tablespoons | smoked paprika |
1 tablespoon | chili powder |
1 teaspoon | salt |
1 tablespoon | onion powder |
1 teaspoon | ground black pepper |
1 teaspoon | cayenne pepper |
1 teaspoon | dried ground thyme |
1 teaspoon | dried oregano |
1/2 teaspoon | garlic powder |
1 cup | brown rice |
1 cup | mango salsa, Costco - Garden Fresh |
Pre heat oven to
Preheat oven to 425 convection. Combine all the spices.
Line a sheet pan with foil and add 2 T olive oil. Brush it over the foil in any area that will have fish.
Rinse and pat dry 1 pound of tilapia. Brush with olive oil. Cover the fillets with the spices and rub it in (both sides). You may not need it all.
Allow the fish to sit for 15 minutes at room temperature prior to cooking.
Place on the oiled pan and give a light spray of coconut cooking oil spray. Place in the preheated oven.
