Lemon Yellow Chicken and Broccoli

Two to three | skinless chicken breasts |
Clump of Broccoli spears Cream of chicken or mushroom soup | |
1/2 cup | mayonnaise |
Juice of about two large Lemons | |
1 or 2 teaspoons | curry or more if you like |
Cook chicken breasts. I usually boil them to keep them moist but grilling might be good too
Steam Broccoli for about seven minutes
Spread Broccoli in the bottom of a 2" lip dish about 9x12 or equal round.
Place cook chicken breasts on top of Broccoli
Spread soup and mayo over chicken ( I like to combine them first for even spreading)
Squirt lemon juice over everything
Spread curry over everything to taste.
Put it away (refrigerate) until you're ready to cook. This is nice because you can make it in the morning and cook it later in the day.
Preheat oven to 350 degrees
Place dish on center rack, cover, and cook for about 45 minutes.
Make some rice and serve with Lemon Chicken for dinner.
