Creamy Avocado Lemon Dressing

1 | avocado |
1 clove | peeled garlic |
1/4 cup | roughly chopped cilantro |
1/4 cup | greek yogurt |
1 tbsp. | fresh lemon juice |
3 tbsp. | olive oil |
1/4 tsp. | ground black pepper |
1/4 tsp. | Kosher salt |
4 tbsp. | water |
Place all dressing ingredients in a food processor or blender. Process until smooth, stopping to scrape down the sides a few times. Thin the salad dressing out with about 1/4 cup water until it reaches a desired consistency. Keep in an airtight contener in the refrigerator for 1-2 weeks. |
