Brisket or chuck roast cut into 5 inch pieces | |
1 | onion |
1 | red bell pepper |
2 anchovies 4 garlic cloves minced | |
2 t | cumin |
1.5 t | dried oregano |
1/2 cup | white wine |
2 cups | chicken broth |
1can | tomato sauce |
2 | bay leaves |
3/4 cup | green olives |
1t | vinegar |
Brown meat. Remove. Sauté onion and bell pepper (12 minutes). Remove. Add 1 T oil, anchovies, garlic, cumin and oregano. Add wine. Reduce. Add chicken broth and tomato sauce and bay leaves. Add the beef Put into 300 degree oven for 2 plus hours. Remove meat. Add onion and peppers and olives. Reduce. Add shredded meat. Add vinegar. Salt and pepper to taste
