Hummus chicken

Chicken breasts, (butterflied) | |
Zucchini, squash (2-3 cups chopped) | |
You can pretty much put whatever veggies you have around in here! Hummus (2-3TBS) | |
Extra Virgin Olive Oil | |
Spices: | |
Garlic Powder | |
Onion Powder | |
All Spice | |
Salt | |
Pepper | |
Directions: Set oven to 350 Cut up veggies into a baking dish Keep the pieces around the same size for even cooking On top of the veggies put: | |
EVOO, (1TBS) | |
1tsp | garlic powder |
1tsp | onion powder |
1/2 tsp | all spice |
salt | |
pepper |
Toss the veggies to coat evenly
I just put my hands in there and mix it around
Set the baking dish aside
Butterfly the chicken
Salt & pepper both sides of the chicken
Spread hummus on one side of the chicken
Put the chicken on top of the veggies hummus side up
Cook for 30 minutes or until veggies are fork soft and chicken is cooked through.
