1 lb | ground pork |
Brine - 4 tsp water, 1/4 tsp baking soda, 1 and 1/8 tsp salt Fold in brine and let set for 10 min | |
1 tsp | garlic |
3/4 tsp | fresh rosemary |
3/4 tsp | black pepper |
1/8 tsp | nutmeg |
Fold all ingredients into pork and make into a patty
Chop together 1 package of crimini mushroom ,
Brown patty and chop into pieces and add 3/4 cup of cream
Brown and salt the mushrooms and then add garlic clove, 1/2 fresh rosemary, 1/2 tsp black pepper and cook until fragrant. Deglaze with 1/2 cup of white wine.
Cook ear pasta and save 1 and 1/2 cups of pasta water.
Add sausage to mushrooms and 3/4 cup of pasta water. Cook until sausage is done. Add 3/4 cup of grated pecorino and then add pasta. Finish with chopped parsley
