Spicy Pork With Zucchini Ribbons

¾ lb | pork tenderloin, thinly sliced |
1 tsp | cumin |
4 tsp | olive oil, divided |
1 tsp | adobo sauce |
2 tsp | oil |
¾ lb | zucchini, sliced very thin lengthwise |
1 Tbsp | lime juice |
Salt to taste |
1. TOSS pork tenderloin cumin, 1 tsp olive oil, and adobo sauce. Heat 2 tsp oil in nonstick pan over medium-high heat.
2. SAUTE pork, turning, until cooked, 4 minutes. Transfer to plate.
3. ADD 1 tsp oil and zucchini. Cook, stirring, 1 minute. Add lime juice and salt to taste. Serve with pork.
