Greek Style Mini Lamb Burgers

Tzatziki 1/2 English cucumber, seeded and grated 3/4 C. | |
1/2 C. | plain yoghurt |
2 t. | fresh lemon juice |
2 t. | chopped fresh mint |
1 sm. | garlic clove, minced |
S & P Lamb Burgers: | |
1.5 lb. | ground lamb |
1/2 sm. | onion, minced |
1/4 C. | chopped fresh parsely |
2 t. | chopped fresh oregano or 1 t. dried |
S & P | |
4 | Pita Breads,, (6 inch) |
2 medium | beefsteak tomatoes, sliced for serving |
Shredded lettuce for garnish |
Directions:
Make Tzatziki: In a medium bowl, combine cucumber, yoghurt, lemon juice, mint and garlic. Season with s & P. Cover and refrigerate until ready to use
Make the burgers: In a medium bowl use a fork to gently combine the lamb, onion, parsley, and oregano, season with s & p. Gently form the mixture into 16 sm. patties about 3/4" thick. Grill until medium-rare. 2-3 min. per side.
Plating:
Warm the Pitas on the grill, halve and fill with the burgers, tzatziki, and tomatoes. Garnish with shredded lettuce if desired.
