Roasted Vegetables with Mozzarella

Green Beans | |
Large | Buffalo Mozzarella Balls |
Olive Oil | |
Salt | |
Pepper | |

Ciabatta, compound butter | |
Directions: | |
Slice | potatoes, onions and yams same size for even roasting on baking sheet. |
Slice Tomatoes in half width wise
Line baking sheet with vegetables, add drizzle of olive oil and salt and pepper
Roast veggies in 400ยบ oven for 15-20 minutes.
Stir Fry or steam spinach with salt and thinly sliced garlic
Mozzarella Balls should be room temp, salted with drizzle of Olive oil
Plating:
Serve 2 potatoes, 1 onion, 2 artichoke hears, 1 tomato, 1 Yam and a spoonful of spinach next to mozzarella ball.
