Labbayeh (Rice With Tomato Juice)

1 cup | rice |
1 small | onion, chopped, (optional) |
2 cloves | garlic |
¼ cup | olive oil, (can use less) |
fresh tomato juice, or 8 ounces of tomato sauce | |
¾ teaspoon | salt |
1/3 teaspoon | pepper |
1/3 teaspoon | allspice |
Sauté onions and garlic in oil. Add rice. Stir for 2 minutes to coat with oil.
Add water to the tomato juice or sauce to make 2 cups juice. Add the juice, salt, and spices to rice.
Cover and simmer over low heat for 30 minutes or until rice is very tender and juice is absorbed. Serve as a side dish with meat dishes.
